This Chocolate Avocado Mousse Is The Ultimate Dessert For Chocolate Lovers

Richly flavoured, yet light as air, this is the the ultimate chocolate fix with a modern twist…

From that sweet melt-in-the-mouth goodness to that incredible feel-good factor, there are so many reasons to love chocolate. We can enjoy biting into a delicious bar anytime, so chocoholics may want to go all out! Rich and creamy, yet light and fluffy chocolate mousse is so moreish. And when the smooth-as- butter texture and slightly nutty and earthy flavour of avocado is added to the mix, it’s a match made in dessert heaven.

While it may have a swanky French name, the surefire crowd pleaser is actually quick and easy to make. Just by fancying it up via putting the mousse in chilled martini glasses and topping it up pistachio nuts and yes, more chocolate, it becomes a restaurant-style winner at the table.

Here’s how to make an innovative, healthy and scrumptious version of chocolate mousse, dreamed up by the culinary experts at Marks & Spencer.

Serves 6

Prep time: 15 mins

Cook time: 4 mins

INGREDIENTS:

• 150g 70 percent cocoa solids dark chocolate

• 300ml double cream

• 1 large avocado

• 2 egg whites

• 2 tbsp caster sugar

• Pistachio nuts

• Chocolate (grated for serving)

METHOD:

1. Put the chocolate into a large mixing bowl.

2. Heat the cream in a saucepan until almost boiling then pour it over the chocolate. Leave to stand for five minutes without stirring.

3. Stir the chocolate and cream mixture until smooth then cool for five more minutes.

4. Meanwhile, set aside a small amount of avocado for decoration then puree the rest using a hand-held stick blender, or mash with a fork until smooth then stir it through the cooled chocolate mixture.

5. Put the egg whites into a clean large mixing bowl, whisk to soft peaks using a hand-held electric mixer, then add the caster sugar and whisk for a few more seconds until glossy. Fold about a quarter of the egg whites into the chocolate mixture with a large metal spoon to loosen it, then fold in the remainder.

6. Share between six serving glasses and chill until ready to serve. Remove from the fridge 15 minutes before eating so it’s not too cold and decorate with the saved avocado alongside chopped pistachio nuts and grated chocolate.
