Healthy Treats To Beat The Heat

BERRY SMOOTHIE STICKS  


Women’s Weekly/Rex

Makes 6 lollies  

INGREDIENTS: 
- 100g (31/2oz) frozen mixed summer fruits/berries 
- 250g (8oz) thick plain yogurt  
- 2 tbsps. maple syrup  

1. Put the frozen fruits, yogurt and maple syrup in a blender and whizz until well mixed.

2. Pour mixture into six lolly moulds, put in the sticks and freeze until firm. It doesn't take long, just a few hours.  

Tip: Push the mixture through a sieve if you don't like the thought of pips in the lollies.  
 

MULTI-TONED MELON LOLLIES 


Women’s Weekly/Rex

Makes 8 lollies 

INGREDIENTS: 
- About 500g (1lb) watermelon flesh (1/4 of a watermelon), cut into chunks -without needing to deseed it 
- About 300g (10oz) honeydew melon flesh (from 1/2 a melon, deseeded), cut into chunks  
- Juice of 1 lime  
- 100m1(31/2floz) pressed apple juice  

METHOD:  
1. Put the watermelon in a blender and whizz until smooth. Strain it into a jug, then pour into eight lolly moulds to come about a third of the way up the moulds. Freeze for about one hour or until almost frozen solid.  

2. Rinse out the blender and add the honeydew melon with the lime juice and apple juice and whizz to a purée.  

3. Push the mixture through a sieve and pour into the lolly moulds, inserting a stick in the middle, and freeze until solid. Pour in remaining watermelon juice to fill the moulds, then freeze. Use within three months.  

4. A When you want to eat the lollies, take the moulds out of the freezer and dip them in hot water for 10-20 seconds to release the lollies. 

Tip: Ice-lolly moulds vary in capacity. If you have any mixture left over, use plastic cups as moulds.
