Spicy Potatoes

One of the Levantine cuisine’s mezze essentials, read on to learn how to make the flavor-bursting spicy potatoes.

OF AN ADULT'S REFERENCE INTAKE

Ingredients

  • 2 cups vegetable oil
  • 3 potatoes (peeled and cut into cubes)
  • 2 cloves mashed garlic:
  • 2 tablespoons olive oil
  • 1 lemon squeezed
  • ½ teaspoon ground coriander
  • ½ teaspoon ground cumin
  • 1 tablespoon pepper molasses
  • Salt, to taste
  • 2 tablespoons chopped green coriander

Method

  1. Heat the vegetable oil in a frying pot
  2. Add the cubes of the potatoes, stir until slightly browned
  3. Move into a dish with kitchen paper to absorb the excess oil
  4. Mix the mashed garlic, olive oil, lemon juice, coriander, cumin, pepper molasses and salt
  5. Add chopped green coriander and stir
  6. Put the mixture in a saucepan on heat
  7. Add the fried potatoes and stir fry until fully distributed, and warm
  8. Place the potato in a serving dish, and serve hot
