Curry Rice with Chicken

Ingredients

  • 1 tablespoon vegetable oil
  • 1 tablespoon ghee
  • 6 chests chicken fillet
  • 2 sliced onions
  • 3 cloves minced garlic
  • 2 cups grated carrots
  • 1 tablespoon salt
  • 1 teaspoon grounded turmeric
  • 3 tablespoons curry powder
  • 1 teaspoon black pepper
  • 3 cups hot water
  • ​2 cups rice (soaked, washed and strained)

Method

  1. Dilute ghee and oil in a pan on heat.
  2. Add the chicken fillet and stir fry until cooked and slightly browned on the sides. Put aside.
  3. Add the onion and stir until soft, then add garlic.
  4. Add grated carrots and stir, then add salt, turmeric, curry powder, black pepper, and mix ingredients well.
  5. Place the fried chicken pieces over the mixture of carrots and onions.
  6. Pour hot water, then add rice.
  7. Cover the pot, leave rice on low heat until cooked.
  8. Serve the rice hot.
