UAE Special: Root Energiser Recipe by Chef Roberto Segura

If you feel like you're suffering from an energy shortage, join the club. With temperatures sometimes soaring past a sweltering 50 °C mark during summer in the UAE, it’s not a surprise most people feel tired and sluggish. Your body feels lethargic in the heat because it is working overtime to maintain a consistent and normal internal temperature. As well as vasodilation (dilating your blood vessels), the body secretes sweat, which helps to cool the skin as it evaporates. However, all this extra labour increases your heart rate and metabolic rate, causing you to feel sleepy. Dehydration, even when it is mild, is another major cause of tiredness in hot weather.

The good news is we can help ourselves feel a bit perkier with energy-boosting foods and drinks. This all-natural root energiser, which includes ingredients such as ginger to reduce tiredness and exhaustion, is a case in point. The recipe is by Chef Roberto Segura, who is behind successful Dubai eateries Craft Café and Waka. Since both venues operate at full capacity on a daily basis thanks to his exciting menus, we can trust the Peruvian epicurean entrepreneur knows the culinary secrets to feeling dynamic.

Ingredients:
1 medium beetroot (250g approx.)
1 carrot (200g approx.)
15g fresh turmeric
20g fresh ginger
3 shots of orange juice (90 ml approx.)
1 shot of lemon juice (30 ml approx.)
1 slice of lemon juice
6 ice cubes

Preparation:

  • Get the beetroot, carrot, turmeric and ginger and blend in one by one in a juicer.
  • Next, mix all the juices together, adding the orange juice and lemon juice.
  • Serve straight into a tall glass with ice and the slice of lemon.
